In order to make iced tea, you can of course brew tea with hot water, and cool them down afterwards, but you will get more out of the tea if you do it the right way. Here we would like to introduce a proper cold-brewing techniques for Chinese tea. Some people prefer cold-brewed tea as it allows less caffeine and tannin to release, which reduce the bitterness of tea. Place 3 grams of tea leaves in 600cc of cool water, set aside for 4 to 6 hours and it’s ready to drink. Cold-brewed tea can be stored in fridge for 24 hours. Bring it on the go in a warm day or try this for your next summer picnic!
